ORTIGARA CAKE and Carli Pastry Specialties

Torta Ortigara della Pasticceria Carli
Carli Pastry Ortigara Cake

At the Carli Bakery in Asiago you can enjoy and buy delicious sweets of your own,all made with the use of selected Italian ingredients from the Highland territory or from the main national locations of production excellence. Really wide is the choice: from the great pastries, biscuits, brioches and cakes, such as meringue, Sacher Cake and apple strudel, to the traditional and renowned Ortigara Cake, ascensed to sweet typical Asiago.

It is a dry cake, produced and packaged in three sizes (500 g, 750 g and 1 kg), circular in shape with a height of about 3 cm. Externally it comes with a tender light brown crust, while inside it is eggnog yellow. Before being enjoyed, the Ortigara Cake can be sprinkled with icing sugar.

The cake is kept soft and fragrant for the first 30/40 days, then dries progressively, thus becoming ideal to be soaked. During the cold months, slightly heated, it acquires a particular softness.

The Patent-protectedOrtigara Cake is an unmistakable specialty in the national confectionery field, thanks to its pleasant fragrance and softness, mainly derived from the use of the most chosen raw materials, including the genuine Asiago butter, present in large quantities in the composition of the dessert.

This confectionery specialty is particularly suitable for convalescents and children, given the high energetic and nutritious power due to the genuineness of its ingredients(wheat flour, butter, eggs, sugar, almonds and aromas).

Ortigara Cake is just apparently a simple dessert. In fact, in order for its dough to be of the right softness and fragrance, the ingredients must be expertly chosen, dosed and processed, according to the secret recipe of the Carli Pastry. This is why the many attempts at imitation over time have been in vain and the copies have never lived up to the original.

The Ministry of Agriculture has included the Ortigara Cake of the Carli Pastry in a narrow list of typical products to be safeguarded in the Italian confectionery sector.
