A Tavola con il Tarassaco di ConcoAt the table with the DANDELION of CONCO-9th Food Festival, Conco from 1 April to May 31, 2014

The restaurateurs in the area for years associated to propose to tourists and to all those who appreciate culture and especially the cuisine of the Asiago plateau, a themed event, "at the table with the dandelion of Conco", held in April and may, with specific menus from appetizer to dessert, quiches and crêpes, soups and risottos, stuffed roasts and salads, biscuits and pancakes.

TheAltopiano di Asiago has a strong tradition of using herbs in cooking and in liquoreria. The variety of possible use are varied and it is unfortunate that in recent years this competence, once passed down from generation to generation, has faded.

One of the few exceptions is the plant with its extensive blooming greets the arrival of spring, the dandelion, Taraxacum officinalis for botanists, with immediate reference to multiple healing virtues .

To Conco soil combination occurs which makes the dandelion (De.Co.) aparticularly tender grass and delicate, almost sweet, suitable for thus to unusual uses, without forgetting that the buds can be preserved in vinegar like capers, which flowers can be processed to obtain delicate sweets, that honey is excellent companion with local cheeses.
