- Squid noodle with pumpkin cream and sesame and poppy seed pattern, scallop au gratin with herbs, tuna tartare marinated in ginger and lime on crispy Chips of Asiago mezzano cheese
First courses
- Risotto with Carnaroli rice "Tenuta Margherita" with prawns, with puntarelle and hazelnuts
- Paccheri di grano duro with Mediterranean brown grouper ragout caught, pistachios and datterini sauce and capers
Mandarin sorbet (G.O.)

- CBT amberjack in mountain potato crust and Taggiasca olives accompanied by caramelized leek and cumin-scented beet mousse
