- Smoked Loin of refuge with tacks in oil and green fragrances
- Sarde in saor
- Egg in slow cooker with cream of broccoli fiolaro
First:
- Homemade tortellini in Capon broth with white celery
- Macaroni with finferle and Grun Alpe
Second:
- Traditional mixed boiled meat with sauces, mashed potatoes and stewed Savoy
- Baked leg of rabbit, tomatoes and shallots confit
Dessert:
- Caramel, Bavarian nemelaka in the Tonka bean and sandblasted pine nuts
- Cake craft with Madagascar vanilla chantilly cream and citrus zest
