Appetizer:

• Smoked Loin of refuge with tacks in oil and green fragrances
• Sarde in saor
• Egg in slow cooker with cream of broccoli fiolaro

First:

• Homemade tortellini in Capon broth with white celery
• Macaroni with finferle and Grun Alpe

Second:

• Traditional mixed boiled meat with sauces, mashed potatoes and stewed Savoy
• Baked leg of rabbit, tomatoes and shallots confit

Dessert:

• Caramel, Bavarian nemelaka in the Tonka bean and sandblasted pine nuts
• Cake craft with Madagascar vanilla chantilly cream and citrus zest
