NEW YEAR'S EVE DINNER MENU IN VAL ANT:
The Appetizer
• Raw oysters, shrimp and clams
• Ham amberjack with pears with Rosemary and salicornia
• Bluefin tuna marinated with orange and lemongrass with diced tomato
• Prawn noodles and crispy fried with ketchup in apples
• Fennel, julienne Fassona Tartare with egg yolk creamy and reduction in beer

• Cream of pumpkin soup, short pastry sweet garlic and salt to Patanegra
• Pearls of Red Vermouth sauce herbs, onion and caviar

• Slice of sea bass with carrot extract and fresh sprouts
