On Saturday 14 November 2026, Malga Col del Vento in Cesuna di Roana, on the Asiago Sette Comuni Plateau, offers "In... Trippiamoci!", a gastronomic evening entirely dedicated to tripe, one of the most representative dishes of popular cuisine of the past.
The event, which is part of the "Autumn in the Malga" festival, wants to pay homage to a specialty deeply rooted in the Venetian culinary tradition, when peasant cuisine knew how to transform even the simplest ingredients into tasty and nutritious dishes.
For the occasion, the malga offers three different interpretations of tripe, offering the opportunity to appreciate its versatility and different nuances of flavor.
It starts with tripe all'asiaghese, an expression of the local gastronomic tradition, continues with tripe parmigiana, with a rich and decisive flavor, and ends with tripe in broth, one of the most classic interpretations of this dish, particularly appreciated for its simplicity.
"In... Trippiamoci!" It will be an opportunity to rediscover the straightforward flavors of traditional cuisine, through recipes that preserve the memory of the eating habits and rural culture of the area.
An evening designed for connoisseurs of this specialty, but also for those who want to get closer to a historic dish of local gastronomy, in the informal and welcoming atmosphere of Malga Col del Vento.
