Salmon beef, red onion of Tropea in saor with flakes of Asiago stravecchio
Rustic skewer, salamella and polenta with sauris lard, porcini mushroom sauce

Linguine with mountain butter and Cantabrian anchovies with burrata cheese
Homemade lean tortellini in capon broth with chives

Traditional mixed boiled meat with sauces, mashed potatoes and sautéed sprouts
