Made in Malga 2024: two weekends dedicated to the best cheeses and mountain products

Made in Malgathe national event dedicated to the best cheeses and mountain products, returns to Asiago again this year for two weekends of celebration, from Friday 6 to Sunday 8 and from Friday 13 to Sunday 15 September 2024.

The event par excellence dedicated to the tasting and discovery of alpine cheeses, now in its twelfth edition, will animate the historic center of Asiago with the market exhibition, as well as masterclasses, guided tastings of mountain cheeses and extreme wines, excursions to the mountain huts, cultural meetings and themed film screenings.

In addition, tastings of Asiago DOP cheese and traditional dishes will be offered in the mountain tavern, and the Mountain Beer Festival will offer mountain craft beers.

Mountain cheeses will be the common thread of two weekends to be spent on the Asiago Plateau Seven Municipalities in the name of taste and flavors.

SATURDAY 7 September

  • 11.00 a.m.: ON THE PEAKS OF TASTE. We will have fun recreating a mountain landscape through the authentic flavor of the products of Stringhetto, an artisan company specializing in the production of jams, chocolate and other delicacies. Cost per person 10€
     
  • 2.00 p.m.: RAW MILK CHEESES FROM THE MOUNTAINS. Raw milk is milk that does not undergo any heat treatment before being processed into cheese. 
    Cheeses, made with this type of milk, are the only ones to preserve a biodiversity of invisible bacteria that make these gastronomic products unique. 
    Tasting • Toma Montfleury with raw skimmed milk, Valle d'Aosta • Nostrano Valtrompia PDO Lombardy cheese • Toma della Burtulina Piemonte • Fontina PDO d'Alpeggio Valle d'Aosta.

  • 4.30 p.m. - Consorzio Tutela Formaggio Asiago presents: SAPORI D'ALPE: ASIAGO PRODUCT OF THE MOUNTAINS AND EXTREME SPIRITS. A journey through the intense and authentic flavors of the mountains, where Asiago Product of the Mountain meets alpine distillates evoking deep emotions. 
    A sensory and gustatory exploration into the richness of the pastures of one of the richest biodiversity heritages in Europe. 
    Fine seasoning of Asiago Product of the Mountain, combined with spirits and cocktails based on alpine herbs, will be tasted. Tasting: • ASIAGO DOP Fresco, Mezzano, Vecchio e Stravecchio - Cost per person 34€
     

SUNDAY 8 September

  • 11.30 a.m. - DAIRY MASTERPIECES OF PIEDMONT. Piedmontese mountain cheeses are renowned for their quality and variety. They represent the testimony of the dairy tradition of the region. 
    Tasting: • Bettelmatt, Piedmont • Castelmagno PDO d'alpeggio, Piedmont • Grasso d'Alpe Monscera, Piedmont • Toma Alpeggio Forcoletta, Piedmont.
    Pairing: European Opatija wines - Cost per person 32€
     
  • 2.00 p.m. - OTHER ITALIAN MOUNTAIN CHEESES. A comparison of cheeses from different regions but united in taste characterized by intense flavors, often rich and spicy. 
    For tasting • Tuma persa da pascolo, Sicily • Sardinian mountain goat, Sardinia • Provola dei Nebrodi, Sicily • Puzzone di Moena DOP, Trentino. 
    Pairing: Extreme mountain wines and balsamic products of CASA LOVATO - Cost per person 22€
     
  • 4.30 p.m. - WHEN CHEESE IS BLUE IN THE MOUNTAINS! Blue cheeses offer a unique and satisfying taste experience. They are characterized by blue-green or blue-green veins within their paste. These veins are the result of mold growth, especially Penicillium Roquefort or other similar varieties. 
    Tasting: • Bleu de Moncenis, Piedmont • Toma verde, Piedmont • Murianeng, Piedmont • Bleu d'Auvergne, France.
    Pairing: Raisin wines - Cost per person 27€
     

SATURDAY 14 September

  • 11.00 a.m. - BEPPE GIOVALE'S GOAT CHEESES. Beppe Giovale is a master cheesemaker and together with his family, he produces, matures and refines cheeses made from raw goat's, cow's and sheep's milk. Beppe made his cheeses known outside the Susa Valley, opening 15 years ago in Rome, with his wife Juliette, a cheese shop in the Jewish Ghetto: "Beppe and his cheeses", which has become a point of reference for enthusiasts.
    Tasting • Ricotta made only from goat's milk whey, delicate. • Goat's milk, a fresh cheese without rennet, with a sweet and light taste. • Sangonetto di Capra, a semi-cooked cheese with a washed rind, with an intense and aromatic taste. • Goat's blue cheese, a creamy and spicy blue cheese, refined with aromatic herbs.

  • 2.00 p.m. - THE MOUNTAIN FLAVORS OF SWITZERLAND. The Swiss cheese-making tradition is deeply rooted in the mountains, where cows graze freely on soils rich in fresh grass, giving the cheeses a unique and unmistakable taste. 
    Tasting: • Bundner Bergkase Switzerland • Emmentaler AOP di Grotta - Switzerland • Gruyère d'Alpage AOP Switzerland • Sbrinz AOP Switzerland.

  • 4.30 p.m. - Asiago Cheese Protection Consortium presents: THE HERO'S AGRICULTURE: MOUNTAIN ASIAGO AND FIRE WINES. A unique sensory journey, where Asiago Product of the Mountain meets the intensity of the finest volcanic wines. A marriage of authentic flavors that invites you to be surprised by the perfect symbiosis between the different aromatic profiles of Asiago cheese Product of the Mountain and the mineral and savory notes of these heroic wines. Experience for true explorers of taste.

SUNDAY 15 September

  • 11.00 a.m. - GREAT MOUNTAIN CHEESES OF LOMBARDY. Lombardy has widespread pastures in all mountain areas. Dairy production has ancient traditions and offers delicious and high quality cheeses. 
    Tasting • Bagòss di malga, Lombardia "Bagòss" means "Bagolino" in the local dialect, from Bagolino, a village in Val Caffaro that is the main production center of this cheese • Bitto DOP, Lombardy Bitto is one of the streams that cross Valtellina • Silter DOP, Lombardy • Toma bred in mines, Lombardy.
    Pairing: Extreme Italian wines - Cost per person 33€
     
  • 2.00 p.m. - CHEESES FROM THE ALPINE ARC ABROAD
    Tasting • Berg Rebell, Austria Cow's milk cheese from the Austrian Alpine pastures, it has an elastic paste, with a straw yellow color, which becomes more and more intense as it matures. • Comté AOP 12-18 months France One of the best-known French cheeses, the milk comes from cows of the "Montbéliard" or "Pie rouge de l'Est" breed. On the rind of the young wheels you can see the texture of the linen cloth in which they are dried. Very suitable for seasoning, due to its large size it is stored "standing", in special convex racks.
    • Gruyère d'Alpage AOP Switzerland Produced from mid-May to mid-October in the mountain pastures. Fine, stringy and fruity, with a more or less salty note, it owes its typical flavor to the great variety of pastures and alpine flora. • Bleu d'Auvergne France One of the great French blue cheeses, made from cow's milk in Auvergne, defined as the cousin of Roquefort.

  • 4.30 p.m. - THE PRINCE CHEESES OF THE OROBIE. The tasting is a synthesis of knowledge that reveals ancient roots of a Lombard territory unique in conformation, climate and vegetation. A precious identity and gastronomic heritage, which deserves the noble title with which they identify.

EXPLORATION OF WILD HERBS by Mara Zeni A collector and naturopath passionate about wild cuisine, she teaches phytotherapy at the Academy of Naturopathy in Trento and for years has been accompanying people to recognize wild herbs, teaching them how to use them in the kitchen and for personal care.

WE WILL CREATE NATURAL COLORS FROM FLOWERS, LEAVES AND HERBS by Florema, botanical print. She creates unique creations on natural fabrics and paper that she prints and dyes thanks to the colored pigments of flowers, leaves and herbs of her territory.

basic techniques for building a clay whistle by Giuseppe De Lazzer The aim is to make people discover the possibility of having fun by transforming raw materials such as clay into special objects using imagination and creativity. A small space where play and exchange with others will help produce an object that speaks of itself.
