"We protect the Earth by cultivating it organically for an agriculture of the future based on research, tradition, innovation and... love!" this is the motto of Biofattoria Bisele, an organic farm and educational farm located in Canove di Roana on the Asiago Plateau 7 Municipalities.

On this promontory of over one hundred hectares, between two valleys, which offers 360° views of the surrounding area, the pure mountain air and the particular microclimate allow you to grow vegetables, cereals, small fruits, lavender and to collect various wild herbs. Visitors can immerse themselves in a regenerating atmosphere with wide open spaces and live an experience in Nature among crops, woods, meadows and pastures.

ORGANIC MOUNTAIN PRODUCTS

On the grounds of the La Cattedra estate, a site of historical importance for mountain agriculture, the Bisele Agricultural Society cultivates food that knows how to excite and revive memories of genuine production, rediscovering the flavors of the past. 
This certified organic farm cultivates respecting the rhythms of the land without the use of synthetic pesticides, and avoids the intensive use of resources, especially water. 
Mountain agriculture is heroic agriculture, and not only because of the slopes and the terrain, but above all because the mountain is the thermometer of the planet and adaptation and mitigation actions towards climate change are the order of the day. 
At BioFattoria Bisele, the land of our fathers is preserved, bringing back to life ancient traditions and crops. Here the commitment to the protection of biodiversity as an agricultural and wild heritage is maximum, as well as the attention to the protection of the landscape and the history of the places, the respect for the environment with a view to sustainable development and the development of various research projects.

RASPBERRY OR STRAWBERRY?

Raspberry or strawberry? What's your favorite healthy snack? At BioFattoria Bisele you can find both!
Thanks to the intensity of their red color, the intoxicating and distinctive scent, each strawberry and each raspberry are delights to bring to the palate to savor the sweet notes of undergrowth and bring back memories of the well-being that the mountains can give in summer. At Fattoria Bisele, strawberries and raspberries are grown on the ground according to the organic method, with rainwater irrigation drop by drop and without the aid of synthetic nutrients, their flavor is authentic. There are different varieties, with different organoleptic properties and textures to be discovered. Fresh raspberries are available from June to October, with a drop in production in August. Fresh strawberries are available in June and July. These small fruits can also be enjoyed in the autumn-winter months in dried form.

EGG AND CAMELINA OIL

The organic mountain eggs of BioFattoria Bisele are a product with an intense flavor, digestible beyond average and with a good content of omega 3. It is a special product that is always sold out due to its uniqueness, ideal for a simple snack during trekking or for the preparation of gourmet recipes. 
On the farm there are 500 laying hens whose animal welfare is guaranteed by housing standards higher than those required by law. They are divided into 3 different chicken coops equipped with all comforts and hygienically state-of-the-art, and which also have an outdoor space 10 times larger than expected with 2 hectares of land available. This leads to a drop in the production of cortisol, the stress hormone.

The hens' feed, based on first choice organic feed, is supplemented with protein pea and other farm products, with a view to circular economy. A further integration is obtained from the organic cake of Camelina. This by-product of Camelina seed oil production is rich in omega 3 and omega 6 that enrich eggs from a nutritional point of view. Camelina sativa or Dorella is a plant that belongs to the brassicaceae family, the same as horseradish and mustard. 

From the cold pressing of the seeds , Camelina oil is obtained, a golden yellow oil whose scent is reminiscent of sesame and the delicate dandelion of our mountains. On the palate, at first glance, a spicy note envelops the palate and then gives way to a more delicate and persistent flavor. 
Ideal for seasoning raw vegetables, sauces and spreads, white meats and fish, it is an oil rich in omega 3 and omega 6, vitamin E and antioxidants
Loose eggs in packs of 4 and Camelina oil in 250 mL bottles are available all year round. Limited production, subject to exhaustion.

MOUNTAIN POTATOES AND VEGETABLES

With the mountain land and the organic method, the flavor of potatoes and vegetables becomes intense, unforgettable and evocative. The Bisele Farm grows some vegetables in Canove, on the Asiago Plateau Seven Municipalities. Fresh produce available depending on the season from July to October-November, including large expanses of organic mountain potatoes with yellow skin and red skin ideal for all preparations, from gnocchi to roasted potatoes with skin. Available from August while supplies last.

THE ANCIENT ART OF SPONTANEOUS HARVESTING

The organic method is not based on intensive production, but on the help that nature itself can offer while respecting its rhythms and spaces. Crop rotation is fundamental to this. In the land that is uncultivated due to rotation and where the slope is too steep , organic wild herbs are born. 

It is said that a Cimbrian woman once recognized and used over 100 different species of wild herbs. According to tradition, at the Chair it is possible to recognize and collect some of them such as dandelion, nettles, mountain spinach and many others. Wild and spontaneous products ideal for the preparation of appetizers, side dishes or condiments for first courses. 
At Fattoria Bisele, other species of herbs are also harvested for fresh or dry consumption by reservation and based on availability/seasonality. 

Fresh wild herbs are available in spring, after the thaw. Dried wild herbs, such as nettles and wild mint, are available from the summer months. Limited production, subject to exhaustion. 

On the farm there is also a short course on the recognition and use of the main herbaceous species.

LAVENDER AND HANDMADE PRODUCTS

The lavender at 1000 m allows the Bisele Agricultural Company to make handmade lavender-scented products of its own production to always carry with you or for the house. Lavender is a plant known since ancient times for its properties: it creates a relaxing and harmonious atmosphere, helps reduce anxiety and promotes psychophysical well-being, also relieving sleep disorders.
Lavender products are available all year round and can be customized upon request. Limited production, subject to exhaustion.

FLOURS AND PROCESSED PRODUCTS

The Bisele BioFarm is the only farm on the Asiago Plateau Seven Municipalities that cultivates soft wheat with organic methods, a cultivation formerly known by our people. It has brought back to life an ancient variety of wheat, selected right here at the beginning of the last century. This wheat has an aromatic profile and flavor that reflect the Cimbrian character: rustic, genuine, mountain.

The wheat is transformed with a stone grinding of the grains, slow and light, which allows the product not to overheat and thus keep the organoleptic properties intact to obtain type 1 and wholemeal flour versatile in the kitchen. To taste the soft wheat flour of Bisele, you can also try the Hazelnut, Lavender or Chocolate Organic Biscuits. If, on the other hand, you want to enjoy a genuine first course reminiscent of the mountains, organic pearl barley is available, a mountain product ideal for traditional soups such as prajo or for creative salads to be enjoyed cold.

BISELE BIOFARM

The Bisele Agricultural Society is also an Educational Farm recognized by the Veneto Region ready to welcome visitors among splendid views and with walks in the green, educational workshops and "wild" games. 500 chickens to observe, donkeys to pet and many different plants to "interview" and smell. But also woods to explore and wildlife tracks to follow...
The educational farm is open to the public during the day and equipped with various comforts for those who want to experience a day in nature. 

In addition to the direct sales point, to enjoy a genuine snack, there are several areas with tables and benches, a charging station for e-bikes and electric cars and 3 different thematic routes designed to show the origin of the products and make you participate in how the land and the agricultural and wild heritage of the Asiago 7 Municipalities Plateau are preserved.

THEMATIC ITINERATIONS:

- B for Animal Welfare: laying hens always busy scratching and "bathing" in the earth, donkeys that can't wait to receive a cuddle, frogs and newts that live in pools ready to dive on the first pass, dragonflies that flutter, the guests of the insect house and the educational apiary where the secrets of the hive are revealed...

- B for organic: a walk through the crops and meadows to discover organic mountain farming, the agricultural heritage and the wild biodiversity that characterizes this area, thanks to the choices that have been made over the years. The lavender, the barley and wheat fields, the cultivation of strawberries and raspberries, dandelion flowers and mountain spinach. At a slow and careful pace it is also possible to admire not only lilies and violets, but also roe deer and chamois, increasingly rare birds such as the corncrake and amphibians almost extinct in the plains such as the yellow-bellied toad. Here the effects on the environment of our choice to use the organic method are tangible.

- B for Bosco: from a former forest nursery unique in its kind, to a luxuriant mixed forest, crossing a valley where the wind has knocked down a plantation to make room for a different regeneration of the forest. Hares, squirrels, foxes and goshawks and many other animals live in these environments and their tracks are clearly visible along the way. Here it is also clearly visible, among ledges and woods, how the climate and the environment are changing, making the balance of the agro-ecosystem increasingly fragile... After all, the mountain is the thermometer of the planet!

The Didactic Garden, the Chalet delle Cocche, the Rustico degli Asinelli, the Hut of Dreams, the Educational Apiary and the Gratitude Bench are just some of the attractions set up to introduce you to mountain agriculture and the wonders of nature that surrounds us. 

The Organic and Animal Welfare trails can also be traveled with trekking strollers or Jolettes.

In BioFattoria there are events open to the public such as guided tours with snacks, educational workshops with natural materials for children from 3 years old, egg hunts and courses of various kinds.

During the summer there are also "Green Weeks", during which children and young people from the age of 7 spend 8 hours a day in nature, a program based on experiential learning and outdoor education: experiences of relationship and care to live exciting adventures together every day in freedom!

ACTIVITIES FOR SCHOOLS AND GROUPS

Experiences in contact with nature aimed at environmental education and sustainability suitable for all ages. Every day, at BioFattoria Bisele, we support the role of the farmer as guardian of environmental and cultural riches, as well as the promotion of conscious consumption, appropriate to a healthy lifestyle. The information and education activities on sustainability aim to make people discover the traditions of the Cimbrian Land and authentic mountain life, as well as the evolution of organic farming, the management of the forests surrounding our fields and the importance of animal welfare.

The approach is multidisciplinary and is based on learning by gaining experience: guided tours, sensory explorations, educational workshops, including specialized ones, and the life stories of those who cultivate and take care of the land, sharing and group reflections with a view to conscious consumption. The Bisele Educational Farm is also available to design personalized educational paths based on the program and interests of the group. The area is also equipped for orienteering and, in case of bad weather, the farm is able to accommodate guests indoors in heated rooms (maximum 90 people).

Teaching doesn't have to be done on the farm. At school, in a nursing home, etc., if there are people interested in learning about this fantastic reality, there are several transportable and interactive handmade materials available that involve participants of all ages to discover together the organic method, agricultural and wild mountain biodiversity from seeds to tree bark, climate change and its effects, The history and interpretation of the Cimbrian land, conscious consumption and the agri-food chain.

For small groups, donkey-assisted activities (AAA) are also organized, from grooming to games together (Pet Therapy). It is also possible to collaborate on educational (EAA) or therapeutic (TAA) interventions. In fact, at the Bisele Biofarm there is a donkey coadjutor regularly registered in the national I.A.A Digital Pet lists.
