The kitchen offers refined reinterpretations of the Venetian and Italian tradition, made with strictly local ingredients and selected according to seasonality, to enhance the richness and authenticity of the Plateau in every dish.
The gastronomic proposal is based on a solid philosophy: seasonality, quality and respect for tradition. Each dish is made from carefully selected local raw materials: Asiago DOP cheese, Tosella, Pennarone, alpine butter, local cured meats, but also honey, potatoes from Rotzo, celery from Rubbio, mushrooms from the woods and wild herbs from the pastures. A mosaic of flavors that, interpreted with refinement and creativity, restores intact the genuine and generous character of this land.
The menu offers a wide choice of appetizers, traditional first and second courses, such as platters of cold cuts and cheeses with honey and mustard, tagliatelle with porcini mushrooms, dumplings with butter and sage, Tyrolean roe deer and venison in salmì, accompanied by a careful selection of local wines and spirits with herbs from the Plateau.
The restaurant also offers a gluten-free menu, designed for those who need a gluten-free diet without sacrificing taste.
In the kitchen, creativity meets experience under the guidance of Chef Carlo, whose training – enriched by prestigious international experiences, including the renowned Boca Restaurant in Dubai – gives life to a cuisine defined as "conceptual casual cooking": intuitive, flexible, deeply linked to seasonality and the value of the product.

The Enoteca also offers a small kitchen service, homemade desserts, coffee, spirits and cocktails, which can also be enjoyed in the hotel's outdoor spaces, such as the gardens and the solarium area.
